Mutton Rogan Josh is an aromatic, slow-cooked red meat curry of Persian origin brought to Kashmir by the Mughals. The name means “oil” (rogan) and “heat or passion” (josh), referring to the rich layer of red oil floating on top. It is a signature dish of Kashmiri cuisine and the traditional Wazwan feast.
