Chicken Dak Bungalow is a rich, rustic colonial-era chicken curry from the British Raj. It originated in remote government rest houses—called dak (mail) bungalows—where local caretakers (khansamahs) cooked simple, flavorful meals for traveling British officials using local ingredients, whole spices, fried potatoes, and boiled eggs.
